Documentation of Norwegian mackerel cold chain during storage and transport between Norway and Japan

Sammendrag

Documentation of temperature history throughout the cold chain of frozen mackerel is an important component in respect of food safety and quality for the export from Norway to Japan. Vital processes in the cold chain were identified in respect of the flow of goods through processing, storage and transport. RFID combined with temperature sensors was regarded as one of the most suitable technologies for documenting temperature in the actual cold chain. RFID temperature sensors may also become a commercially used technology for temperature documentation and the test was designed as a feasibility study. When developing and verifying chemical test methods for documenting food safety hazards of mackerel precise temperature documentation through the cold chain is a prerequisite. Some of the mackerel cardboard boxes that were tagged with RFID temperature sensors were used in the development of such methods.
