Works with the development and application of near-infrared (NIR) spectroscopy for food quality assessment using compact, non-contact instruments (food scanners). Focuses on achieving robust measurements of challenging, intact and heterogeneous samples, as well as under challenging measurement conditions. Examples include measuring water content in whole dried salt-cured fish and sugar content in strawberries directly on the plant in the field.
