The power of education students to make an impact on food loss reduction in a global perspective (interactive visual presentation)

Sammendrag

Academia is an important contributor in the work towards more sustainable food system through higher education, research and innovation. UNESCOs report on Education for Sustainable Development Goals (2017) encourages us as universities to rethink education in order to contribute to the achievement of the SDGs within their time frame till 2030. In our work we have chosen to leverage the potential through some strategic choices with an innovative and systemic approach. This work has had a focus on improvement of the utilization of our food resources, which is particularly linked to the UNs sustainable Goal 12, responsible consumption and production and Target 12.3 on food loss and waste.

This paper will reflect on methodology for transition to bioeconomy using reduction of food loss in the value chain of surimi production in India as a case. Students from India and Norway together with their supervisors had to adopt new qualitative methodology to identify barriers in exploiting the side streams and also to be able to communicate their findings.
